Salpicon Salad

6 tablespoons olive oil
3 tablespoons orange juice
1 tablespoon lime juice
2 tablespoons white vinegar
1 tablespoon minced fresh onions
½ clove garlic, minced

Shredded beef
Mixed lettuce
Pico de gallo salsa

Combine dressing ingredients and blend in a blender or food processor until incorporated. Allow to sit for at least 20 minutes. Mix the lettuce with the dressing, garnish with the rest of the salad ingredients.

I attended a cooking class at a Mexican Restaurant in Puerto Vallarta--this was the salad we made. It's very delicious and perfect with anything Mexican!
