Blueberry White Chocolate Oatmeal Cookies

Last night was my first time attending book club, first time making these cookies, and first time using a Kitchen aid mixer. And I enjoyed it all. :) I thought these cookies seemed kind of strange at first. They come out blue so don't be alarmed. And when they were hot out of the oven they were pretty good, but after they had cooled for a couple of hours and the flavors were more set they were DELICIOUS! They were successful at book club (thankfully) and at home. I encourage you all to try them. :)
1 C softened, unsalted butter
3/4 C brown sugar
3/4 C sugar
2 eggs
1 t vanilla
2 1/4 C flour
1 t salt
1 1/4 C quick oats
1 1/2 C frozen blueberries
1 C shredded sweetened coconut
1 bag (12 oz) white chocolate chips
1. In a stand mixer, cream the butter, brown sugar and sugar until well combined. Beat in eggs and vanilla. Slowly add flour, baking soda, salt, quick oats, bluberries, coconut and chocolate chips until just combined.
2. Chill dough for a few hours to firm.
3. Preheat oven to 375 deg. F. Drop dough by Tablespoonfuls onto a baking sheet and bake for 9-11 minutes or until edges start to crisp. Cool for 5 minutes before transferring to cooling rack.
