This is a change from the baked bean casserole often served at picnics. It got good reviews at our Labor Day picnic.
- 1 lb. white beans, soaked overnight in plenty of water
- 2 tsp. salt (to taste)
- 1 chopped onion
- 1 chopped green pepper
- 1/4 lb. bacon
- 1 can undrained crushed pineapple
- 1 can mandarin oranges drained
- 1/4 c cider vinegar
- 1 Tab soy sauce
Cook bacon, crumble, saute onion and green pepper. Add all ingredients to the beans in crockpot or bake in oven. Crockpot takes 2 to 3 hrs, oven at 325 takes 1 1/2 hrs.
