Blueberry Ricotta Pancakes

Dad (grampa Ray) likes these pancakes because they melt in your mouth, and are good tasting.

2 large eggs, lightly beaten
1-15 oz. container ricotta cheese
1 cup milk
1 T sugar
2 cups Bisquick or other pancake mix
1 cup fresh or frozen blueberries

In large bowl combine eggs, ricotta, milk and sugar. Beat with wisk or spoon until well blended. Add pancake mix, stirring just until it disappears. Stir in blueberries.

Heat griddle, spray pam or add 1-2 T oil. Pour 1/4 cup batter for each pancake. Turn when ready. Can use warm maple syrup or dust with confectioners sugar at the table.
