White Bean Chili

While I am waiting for our little baby to come, I have been spending my days unpacking, cleaning, running way to many errands, and cooking! It's been fun, but today I've decided to just relax and do sit-down activities. So here is what I made, ate, and froze yesterday. :) It is warm and delicious!

White Bean Chili
3 cans white navy beans
6 cups chicken broth
2 garlic cloves, minced, or 3 tsp garlic powder
2 medium onions, chopped
1 Tbs oil
2 tsp. cumin
1-1/2 tsp. oregano leaves
1/2 tsp. pepper
2 (4 oz) cans chopped green chilies
4 cups cooked chicken breast meat, chopped
Topping ideas:
chopped lettuce, tomatoes, green onions, cilantro, salsa, sour cream, grated cheese, TORTILLA CHIPS!

Directions:
Saute onions, chilies and seasonings together and mix well. Meanwhile, combine beans, broth and garlic in a large pot. Add the onion mixture to the bean pot. Simmer 50 minutes. Add the chopped chicken and cook for 15 more minutes. Enjoy!
