Sweet and Sour Chicken

A favorite gluten free meal!!!

4-8 boneless chicken breasts
1 egg beaten
Cornstarch
Oil

2 1/2 Cups sugar (I reduce this)
3/4 cup ketchup
1 1/2 cup seasoned rice vinegar
3 TBS soy sauce (make sure this is not made with wheat)
1 1/2 tsp Garlic powder

optional - sliced onions, peppers, pineapple as desired

Cut chicken into cubes and dip into egg and cornstarch. Fry in oil till browned on both sides.

Sauce:
Mix sugar, ketchup, soy sauce and garlic powder together.

Place chicken in foil lined pan. Pour sauce over chicken. Bake at 325 for 1 hour stirring every 15 minutes to mix chicken into sauce.

I like to cook the sliced onion, red/yellow peppers and pineapple in a frying pan quickly (so they are still a little crunchy) and add them the last few minutes.

Serve over rice.

I love this, especially served over brown rice.
I just cook the onions, peppers, and pineapple with it the whole time instead of putting it in at the end (because I would forget) and it turns out great still, they're just more cooked instead of crunchy.
